Weekly Recipe: Egg, Nut and Milk Free Yummy Chocolate Cake!
February 8th 2008 02:26
Great cake recipe for those with egg, nut or milk allergies. Afraid it's not good for those with problems with wheat.
Ingredients:
- 3 cups flour
- 2 cups castor sugar
- 1/2 cup dairy free 100% cocoa powder
- 2 tsps baking soda (bicarb soda)
- 1 tsp salt
- 2 cups water
- 2/3 cup veg oil
- 2 tbs distilled white vinegar
- 2 tsps vanilla extract
- preheat oven to 175 degrees celsius.
- grease and flour two round cake pans.
- Mix the flour, sugar, cocoa, baking soda and salt together in a large bowl.
- Add water, oil, vinegar and vanilla to dry ingredients and mix with wooden spoon or wire wisk until well combined. Split between two cake pans.
- Bake for about 35 minutes or until toothpick comes out clean from centre. (Be sure cake is done, as I've experienced an uncooked cake and it's not pretty!).
- Cool in pan for 10 minutes, then pop unto a wire rack and cool completely.
- Frost with your favourite frosting (I use Betty Crocker's ready made frosting, but check the ingredients for your specific allergy concerns first).
Enjoy!
