Milk Free Egg Free Nut Free Lemon Poppy Seed Muffins Recipe

1/2 cup dairy free margarine
1/2 cup sugar
3 tbs veg oil, 3 tbs water, 2 tsp baking powder mixed together
2 tbs fresh squeeze lemon juice
3/4 cup water
1 tbs poppy seeds
2 tsp grated lemon peel
2 tsp baking powder
1 tsp vanilla extract
1/4 tsp salt
- preheat over to 160 degrees
-Grease 12 muffin pan
- cream margarine and sugar in a large bowl. Add the water/oil/baking powder mix. Add remaining ingredients until well combined.
- Pour batter into muffin pans till each one is nearly full. Bake for 25-30 minutes. Use a toothpick in the centre of one of the muffins to see if they're done. Cool before serving.
